Candidate must have an extensive knowledge of various cuts and types of meat.  A strong understanding of sanitary food handling procedures.  Exceptional knife skills to handle and cut meat safely, accurately, and efficiently.  Experience cutting swinging beef, prior use of meat grinders, knives, saws, and other equipment use during meat processing preferred.
